What I Eat In A Day NO PREP! / PLANT BASED + OIL FREE

Highly requested, we’re showing EXACTLY what we eat in a day on a whole foods, plant based diet with no sugar, no oil, and salt used very sparingly. This is really how we eat day in and day out. We aren’t usually the types to have things prepped in advance so we wanted to show you three of our no-prep meals. These meals keep us on track even when we have a busy workday or are taking care of the baby.
For breakfast, Dillon whipped up a super easy and very tasty oatmeal.. Extra blueberries of course! He taught us (me included!) a trick about getting the perfect amount of water in the pot: just stir the oatmeal as you add in water and once the oats don’t stick to the pot anymore, you have enough water! He added ground flax meal, cinnamon, blueberries, and our famous Well Your World Date Powder and simmered it on the stove. Luka loves this for his breakfast too! We don’t usually add walnuts but we did today because we had some leftovers from our Walnut Pâté Dip. Check that dip out if you haven’t already!

Oatmeal
Start your day off right!
Ingredients:
- • rolled oats
- • water or plant milk
- • fresh/frozen berries
- • Date Powder
- • ground cinnamon
- • nuts/seeds (optional)
Instructions:
Add enough oats to a pan to feed the amount of people you are preparing for. Add in water under the faucet, stirring until the oats can spin freely in the pan. Add the rest of the ingredients and simmer while stirring for about 5 minutes. Enjoy!
For lunch, we whipped together our delicious Mexican Buddha Bowl made famous by our 10 Minute Meals episode we debuted on our live cooking show, Well Your Weekend. We also call this one our “WinCo Meal” because we usually get all of the ingredients at Winco, but you could find the ingredients for this one anywhere! With a bag of frozen peppers and onions and corn and another bag of frozen rice, you can make a delicious bowl fast! All we do is steam it on the stove with some of our favorite spice blends and we don’t even measure. Whip up a quick Pico and serve with some chopped romaine for a delicious and fresh meal that you will want to make every day. Add optional avocado or guacamole on top if you aren’t avoiding overt fats.

Mexican Buddha Bowl
Also known as the “WinCo Meal.”
Ingredients:
- Bowl Ingredients
- 1 10-12 oz. bag frozen brown rice
- 1 14-16 oz. bag frozen “Southwest Veggies” (onions, bell peppers, corn, beans)
- 1 tablespoon WYW Fiesta Fire Blend
- 1 tablespoon WYW Chili Lime Seasoning Blend
- Pico De Gallo
- 4-5 roma tomatoes, cored and diced
- ½ red onion, diced small
- 2-4 jalapeño peppers, cored and diced small
- 2 teaspoons minced garlic
- 2 limes, juiced
- 1 bunch cilantro, chopped
Instructions:
First add the frozen rice to your steamer basket on the stove along with a bag of the Southwest mix. The one we like includes black beans, corn, onion, and bell pepper all in one freezer bag. If you can't find that mix then you can build your own with a can of black beans and corn plus some frozen bell pepper and onions. I add the seasoning right to the steamer basket just to make it simple. Allow it to steam for just 5-10 minutes to heat through. Then give it all a good stir and it's ready!
To assemble, we like to add a layer of chopped romaine lettuce to the bottom of a big plate or bowl. Then we top with the steamed mix.
Then it's time for some fresh veggies on top if you want to go the extra mile. I love to make a quick pico de gallo of chopped tomatoes, red onion, jalapeño, cilantro, lime juice, and some of our WYW Chili Lime seasoning. Sometimes we go as simple as just chopped tomatoes and avocado on top with the Chili Lime. Enjoy!
Dinner was quite possibly our favorite fast instant pot recipe: “Baked” Ziti! We showed off a little hack we do with the spices and some of the dry ingredients for this one.. You’ll have to watch the video to see this hack! We used fresh veggies this time but you could also use frozen to make this even faster or if you were traveling or camping. We also use gluten free pasta since I avoid gluten, but chickpea or lentil pasta is perfect for the instant pot because it holds its shape and texture.
