Vegan Baked Beans without Salt & Oil

Nothing says comfort food more than homemade baked beans. That is why we came up with a deliciously healthy and hearty version of the classic canned baked beans. This recipe is perfect for those days when you have a tight schedule and a busy day. We made this recipe to be quick and simple with little cleanup and preparation, so no matter what you have going on you can make these delicious baked beans that everyone will enjoy.
Did we mention this recipe can be done in multiple different ways, which is why we love it so much. You can choose different fruits of your choosing to sweeten your baked beans, frozen or fresh onion, and much more making it easy to work with what you already have in your kitchen.
Begin this recipe by chopping the yellow onion, mincing the garlic, and adding both to a large pot. You can omit this step to save time by buying a frozen bag of yellow onions and bottled minced garlic.
To prepare the fruit we decided to blend the thawed frozen pineapple chunks. Mangos or dates are also great options if you already have those on hand. If you do not have a blender or would like to chop the fruit instead that is perfectly fine!
Time to start cooking! We are going to start off by sauteing the onion. Add hot water or veggie stock to keep the onions from sticking. Once everything has evaporated and the onions appear translucent, it is time to move on to the next step. If you are low on time and using frozen onions you can make this recipe even more simple by adding all the ingredients at once, bringing to a boil, and allow it to simmer for half an hour. It still tastes just as amazing!
Get ready for flavor town, because we are adding all the spices and flavors to make these baked beans taste exceptional. First up, we like to add some crushed red pepper for spice, but it is optional! Then we add the chipotle pepper, cumin, Hungarian or smoked paprika, white or black pepper, mustard powder or bottled mustard to the pot with the onions. While adding the ingredients to the pot make sure to add hot water and stir if the mixture becomes dry.
Now we are going to add the entire can of tomato paste to the pot. Ensure that you are using no salt added tomato paste. Add the apple cider vinegar as well.
It’s bean time! Add the canned pinto beans to the pot. We highly recommend using no salt added beans, as there is no need to strain or rinse them, just add the entire can. Stir the mixture well. Ingredients:
- 1 onion, diced small
- 5 garlic cloves, minced
- 1 ½ teaspoons ground cumin
- 1 ½ teaspoons smoked paprika
- ½ - 1 teaspoon crushed red pepper
- 1 teaspoon mustard powder
- 1 teaspoon chipotle powder
- ¼ teaspoon white pepper
- 1 tablespoon Well Your World Voodoo Cajun Seasoning Blend
- 1 teaspoon liquid smoke (optional)
- 3 tablespoons apple cider vinegar
- 1 6 oz can of tomato paste
- 4 cans pinto beans, with liquid
- 1 ½ cups pineapple (or try mango/dates), minced (~10 ounces)
- fresh chopped cilantro to top
Instructions:
Add the onions to the pot first, browning them by dry sauteing without adding too much water.
Once the onions are browned, add everything else (except the cilantro) to the pot and bring to a boil.
Reduce the heat to low, cover, and let cook for about 30 minutes or more.This allows for the flavors and textures to come together into the perfect baked beans.
Garnish with cilantro, serve, and enjoy!
