This whole food plant-based No-Chicken Noodle Soup has all the elements you are looking for without all the added salt and oil. The flavor in this soup is unlike any other and puts canned soup to shame. You are especially going to love all the different starches in this recipe that will keep you satisfied all day long. We use Soy Curls in this recipe to give the soup richness while adding a chicken-like texture.
Soy Curls are made from whole soybeans that are minimally processed and can be used in a variety of recipes. They arrive dried and can easily be rehydrated in water or in soups and stews like we did in this recipe. You can find Soy Curls here on Amazon or on the Butler Foods website. If you are unable to use Soy Curls, simply omit or use chickpeas or tofu instead.
Are Soy Curls the same as TVP?
Oftentimes we are asked if textured vegetable protein or TVP is compliant for a whole food plant-based lifestyle. Commercially produced TVP is a highly processed product and is not considered to be a whole food. Soy Curls on the other hand, are minimally processed and are great when enjoyed in moderation.

No-Chicken Noodle Soup
A healthy take on a comfort food classic!
Ingredients:
- 1 yellow onion, diced
- 2 medium carrots, diced
- 3 ribs celery, diced
- 3-4 garlic cloves, minced
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika
- 1 teaspoon dried parsley
- 1 bay leaf
- 1 tablespoon WYW Nooch
- 3-4 gold potatoes, cubed
- 4 oz. chickpea or red lentil pasta
- 1 heaping cup Soy Curls, broken into small pieces
- 8 cups WYW Veggie Broth (8 teaspoons mix + 8 cups water)
- fresh chopped parsley, to serve
Instructions:
In a large soup pot, sauté the onion, carrots, and celery over medium high heat, adding water or veggie broth as needed to keep from sticking. Add in the garlic and sauté for another minute.
Next, add the oregano, thyme, black pepper, paprika, bay leaf, and nutritional yeast along with a bit more veggie broth as needed and continue to sauté for another minute.
Then add the potatoes, pasta, soy curls, and veggie broth and bring back to a boil. Reduce the heat and simmer for about 15 minutes or until the pasta and potatoes are cooked to your liking. Because the pasta and soy curls will absorb plenty of liquid, you will likely need to add more at the end to reach your desired soupy consistency.
Serve topped with chopped fresh parsley and enjoy!
