World's Easiest Fruit Cobbler

Ingredients

Fruit Mixture

  • 2 1/2 cups frozen fruit, thawed
  • 1/4 cup water
  • 2 tablespoons WYW Date Powder
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon


Pancake Topping

Method

Preheat the oven to 375°F.

Add the Fruit Mixture ingredients to a mixing bowl, stir well to combine, then pour into a small glass baking dish (1.5 quart size is plenty).


To prepare the Pancake Topping, add all of the ingredients to a mixing bowl and whisk or mix well until smooth. Use a spatula to spread this batter on top of the fruit mixture in your baking dish. We don't try to spread it out evenly, because I like how the fruit bubbles up in the oven if you leave some spaces.
Immediately place the dish in the oven and bake uncovered for about 25 minutes. (I say immediately because the baking powder in our pancake mix is now activated, so it's go time.) For a softer topping, try baking it covered with foil for a few extra minutes. Serve and enjoy warm!
