Whole Roasted Cauliflower

Ingredients

  • 1 large head cauliflower


Marinade

  • 1 lemon, juiced
  • 2 tablespoons tahini
  • 2 tablespoons water
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground turmeric
  • black pepper, to taste

Method

Preheat the oven to 350°F.

Using a paring knife, remove the leaves and most of the stem from the cauliflower. Leave the head of the cauliflower intact and set aside.

In a small mixing bowl, add all of the marinade ingredients and whisk to combine.

Place the cauliflower on a parchment-lined baking sheet and brush the marinade all over the outside of the cauliflower.

Bake for 60-70 minutes uncovered until golden brown.

Remove from the oven and slice to serve!
