White Bean Scramble

Ingredients

  • 8-10 mushrooms, chopped
  • 2 zucchini, chopped
  • 1 yellow onion, diced
  • 1 tablespoon minced garlic
  • 2 10-12 oz. bags frozen riced cauliflower
  • 2 15 oz. cans white beans, drained and rinsed
  • 1/4 cup WYW Nooch
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • crushed red pepper, to taste
  • 2 handfuls fresh spinach, chopped


To Serve:

  • black pepper

Method

In a pot or large skillet, sauté the mushrooms, zucchini, and onion over medium high heat, adding water or veggie broth as needed to keep from sticking. Add the garlic and sauté for another minute.

Add the riced cauliflower and cook for another 2 minutes. Mix in the remaining ingredients except for the spinach, add more veggie broth or water as needed. Continue to cook for a few more minutes until everything is heated through.

Stir in the spinach and remove from the heat once it is wilted.

Sprinkle on some black pepper to serve. Enjoy!
