Method
In a large saucepan, add the lentils, onion, bell pepper, and garlic and sauté over medium high heat for 5 minutes until tender, adding veggie stock as needed to keep from sticking.
Add the pepitas along with Calypso or your favorite WYW seasoning. Continue to sauté for another minute.
Squeeze on the lime and serve over a bed of greens topped with chopped tomatoes.
