Method
Preheat the oven to 350°F.
In a large mixing bowl, add the squash, carrots, onion, parsnip, apple, celery, rice, and tempeh. Set aside.
In a separate bowl, add the remaining ingredients. Whisk to combine and pour into the bowl with the squash, veggies, and rice.
Mix well to ensure everything is evenly coated. Transfer to a large glass baking dish and cover with foil. Bake for about 45 minutes.
Remove from the oven, stir, and place the foil back on. This helps to ensure all of the rice is getting cooked evenly.
Bake for an additional 45 minutes. The cook time may vary depending on the dish you use, a deep dish will take more time than a shallow dish.
Check the dish every 20 minutes until done.
