Begin by adding the water to a large pot and bringing to a boil.
Add the rice and stir. Bring the water back up to a boil and reduce to a simmer. Allow the rice to cook for 30 minutes, uncovered.
Strain out the water, return the rice to the pot, and cover with a tight fitting lid. Set aside on the countertop for 20 minutes. This steam dries the rice for the perfect texture.
To quickly cool the rice, spread it out over 1-2 sheets of parchment paper and let it sit for about 10 minutes.
