Pasta con Broccoli

Ingredients

  • 1 8-10 oz. box favorite pasta
  • 1-2 broccoli crowns, chopped into florets

Sauce

  • 1 12-16 oz. silken block tofu, drained
  • 1/2 cup Nooch
  • 1/4 cup veggie broth
  • 1/4 cup soy milk
  • 1 tablespoon raw cashews (optional)
  • 2 teaspoons WYW Italian Seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

Method

Prepare the pasta according to the package instructions, adding the broccoli to the pot for the last 4 minutes of cook time. Strain, return to the pot, and set aside.

While the pasta is cooking, prepare the sauce. Add everything to a high-speed blender and blend until smooth.

Add the sauce to the pot with the pasta and stir well to combine. To serve, top with black pepper and enjoy!
