Method
Preheat the oven to 350°F.
Add the banana, dates, vanilla, and cinnamon to a food processor and process until smooth. If using Date Power, add these ingredients to a large mixing bowl and mash well with a potato masher.
Add the remaining ingredients along with the banana mixture to a large mixing bowl and stir well. Spread the mixture evenly onto a parchment-lined baking sheet and bake for 20 minutes at 350°F. Remove, then reduce the oven temperature to 250°F.
At this stage, the granola will come out like one big block. Tear off a few chunks and pulse them in your food processor to break them back up into something resembling granola. You can do this in small batches. Alternatively, you can let it cool a bit and use your hands to break it up. Then, spread the granola out on double the number of baking sheets as you started with. We want it to have enough space to dry out. Place it back in the 250° oven for another 20 minutes. Remove and allow to cool. As it cools, it will dry out even more, so don’t aim for it to come out of the oven totally dried out or crunchy.
