Method
In a large mixing bowl, mash the chickpeas with a potato masher to reach a coarse texture.
Add the celery, cranberries, nuts, green onions, and black pepper to the bowl and mix well.
Blend all of the dressing ingredients, adding water as needed to reach a thick but pourable consistency.
Combine the salad and the dressing together and mix well. Adding additional water as needed to reach a thick but pourable consistency.
Enjoy as a sandwich or over a bed of lettuce!
