No Turkey Salad

Ingredients

Salad

  • 2 15 oz. cans chickpeas, drained and rinsed
  • 3 green onions, chopped
  • 2 ribs celery, diced
  • 1/2 cup dried or fresh cranberries, chopped
  • 1/2 cup walnuts or pecans, chopped
  • black pepper, to taste


Dressing

  • 3 deglet dates
  • 1/3 cup tahini
  • 1/3 cup water + more as needed
  • 1/4 cup white wine vinegar


Sandwich:

  • whole wheat bread
  • sliced red onion
  • sliced avocado
  • sliced tomato
  • lettuce

Method

In a large mixing bowl, mash the chickpeas with a potato masher to reach a coarse texture.

Add the remaining salad ingredients to the bowl and mix well.

To prepare the dressing add all of the ingredients to a high speed blender, adding water as needed to reach a thick but pourable consistency.

Pour the dressing into the bowl with the salad and mix well.

Enjoy the salad by itself, as a delicious sandwich, or over a bed of greens!
