Mexican Chopped Salad

Ingredients

  • 2-corn tortillas
  • 1 head romaine, chopped
  • 1 bell pepper, diced
  • 1/2 medium red onion, diced
  • 1 medium zucchini, diced
  • 4 roma tomatoes, seeded/cored and diced
  • 1 15 oz. can corn, drained and rinsed
  • 1 15 oz. can black beans, drained and rinsed
  • 1/4-1/2 cup WYW Sweet Heat

Method

Begin by cutting the tortillas into thin strips. Air fry the strips at 400°F for a few minutes until golden brown.

Throw all the ingredients in a large bowl except for the tortilla strips. Toss the salad well to ensure the dressing is evenly distributed.

To serve, top with the tortilla strips and enjoy!
