Method
Chop the potatoes into 2" chunks. Add the potatoes to the Instant Pot along with the garlic powder, onion powder, Stardust, and water. You do not need a trivet or steamer tray. Cook on high pressure for 6 minutes, quick release. Do not remove the water. Add about 1/4 cup of soy milk and mash the potatoes while stirring to ensure the milk soaks in. Add more soy milk as needed to reach your desired texture.
To prepare the Mushroom Gravy, add all the ingredients to a high-speed blender and blend until smooth. Add more liquid or more gravy mix to achieve your desired texture.
Serve with roasted veggies or enjoy on its own!
