Irish Stew

Ingredients

  • 4-5 yukon gold potatoes, chopped
  • 2 carrots, diced
  • 2 parsnips, diced
  • 2 ribs celery, chopped
  • 2 portobello mushrooms, chopped
  • 1 1/2 onions, diced
  • 1/2 6 oz. can tomato paste
  • 2 tablespoons minced garlic
  • 2 teaspoons dried thyme
  • 1 teaspoon dried sage
  • 1 tablespoon fresh rosemary (or 1 1/2 teaspoons dry)
  • 5 cups water or veggie stock (more if desired)
  • 1/2 cup fresh parsley, chopped

Method

Add all of the ingredients except the fresh parsley to a large pot or dutch oven.

Bring the pot to a boil and stir. Lower to a simmer and cook for 20- 30 minutes, until vegetables are tender.

Use an immersion blender in the pot, or scoop a few ladles of stew into a regular blender and blend until smooth and then add it back to your pot of stew. This will give the stew a creamier texture.

Stir in the chopped parsley just before serving. Enjoy!
