Method

To get that extra crispy crunch, use the famous “twice cooked” potato method. Simply, throw the potatoes in the pressure cooker with a cup of water at the bottom and cook on high pressure for 8-10 minutes, depending on the size of the potato. Quick release and let the potatoes cool before you store them in the refrigerator.

Once they’ve chilled overnight, slice the potatoes widthwise (the short way!), not too thin, and coat each piece with a generous amount of Everything Bagel Seasoning on both sides. You can use a plate with seasoning on it to press each one into it, so the seeds don't all fall off. Air fry for about 20 minutes at 400°F or until you’ve achieved your desired level of crunch.
