Pizza Oatmeal Bake
The recipe you didn’t know you needed!
Ingredients:
- 1 ½ cups water or soy milk
- 1 cup rolled oats
- ¼ cup yellow/red onion, diced
- ¼ cup bell pepper, diced
- ¼ cup zucchini, diced
- ¼ cup spinach, chopped
- ¼ cup mushrooms, chopped
- ¼ cup black olives, sliced (optional)
- ¼ cup WYW Nutritional Yeast
- ½ teaspoon crushed red pepper or black pepper
- 1 teaspoon baking powder (optional)
- Pizza Sauce
- ¼ cup WYW Pizza Sauce
- OR
- ¼ cup canned diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- Cashew Parmesan
- ½ cup raw cashews
- 1 tablespoon WYW Stardust or favorite seasoning
Instructions:
Preheat the oven to 400°F.
Add all of the ingredients to a large mixing bowl and mix well to combine. Transfer the batter to a shallow glass baking diss and spread into an even layer. Air fry for 13-15 minutes or bake for about 20 minutes until golden brown.
While the oats are baking, prepare the Cashew Parmesan by adding the ingredients to a small bullet blender and blend until you get a coarse, but consistent texture. Set aside.
Sprinkle the Cashew Parmesan on top and enjoy!
